Job Overview:
The Prep Cook is responsible for the timely preparation of all cold prep items including but not limited to: salad and sandwich dressings, dipping sauces, marinations, canapés, hors d'oeuvres, buffet displays and knowledge of banquets salad and dessert presentation. Assembles food onto plates according to written specifications, adhering to quality standards. Exercises proper handling of food items and maintain an organized work area including all refrigeration and storage areas.

Duties and Responsibilities:
- Cooks all food items in accordance with the Company's policies.
- Assumes 100% responsibility for quality of food served.
- Complies with nutrition and sanitation regulations and safety standards.
- Knows and consistently follows standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.
- Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period.
- Maintains a clean and sanitary work station area.
- Follows proper plate presentation and garnish set up for all dishes.
- Pick up and return of daily bank and deposit.
- Greet customers in a courteous and friendly manner.
- Ring the customer's order in a timely fashion.
- Be knowledgeable about the food product being served and answer any questions the customer may have.
- Adhere to guidelines in the proper handling of food.
- Keep condiment area stocked and clean.
- Be courteous and professional when interacting with fellow employees.
- All other duties as assigned.
Job Requirements: (please ensure you meet the listed requirements prior to applying)
- High School Diploma preferred.
- 2+ years of cooking experience in kitchen or equivalent education/certification preferred.
- Must be able to operate large volume kitchen equipment such as oven or slicers.
- Must be able to obtain the appropriate state occupational license.
- Experience in hospitality preferred.
- May require the knowledge, skills and abilities to work with computers.
- Have the ability to add, subtract, multiply and divide in all units of measure, using whole numbers.
- Excellent communication skills.
- Must have the ability to follow instructions, ability to perform assigned tasks under limited supervision.
- Must be able to stand and exert well-paced mobility for up to 10 hours.
- Enthusiastic and energetic.
- Will be required to work a flexible schedule, which includes nights, weekends and holidays.
- Willing to travel and participate in training as recommended or required
- Must have a Florida Gaming License (or the ability to obtain and maintain a license) as a requirement for this position
- Must have willingness and ability to work in a smoke/secondary smoke environment
