Summary of Position:

Manage the daily operations of Aunt Chilada’s as directed by the General Manager, in order to maintain high service levels, top quality products and ensure proper maintenance of facility and equipment, while generating maximum revenues and profits through local catering sales.

Essential Functions:

  • Approve department schedules to ensure labor budget guidelines are met.
  • Develop and advance all programs required to ensure all transactional responsibilities are efficient and accurate (payroll, bank management, EOM, menu implementation, etc.).
  • Conduct monthly department meetings and submit minutes to the General Manager.
  • Conduct staff training and develop periodic staff recognition and awards contests.
  • Manage/approve all liquor, beer, wine and bar supplies as needed to ensure a cost effective and cutting edge program is consistently achieved. Conduct and submit monthly beverage inventory.
  • Manage the daily operations of Aunt Chilada’s as directed by the General Manager, in order to maintain high service levels, top quality products and ensure proper maintenance of facility and equipment, while generating maximum revenues and profits through daily restaurant operations and local catering sales.
  • Monitor and supervise guest service in dining room and lounge.
  • Monitor food presentation and production times.
  • Monitor the flow of guests with the host.
  • Handle all guest challenges and ensure challenge resolution training is in place.
  • Assist in generating sales from local catering functions. Provide necessary banquet collateral and information for potential clientele. Work closely with the General Manager to establish monthly goals. General Manager will ultimately approve goal.
  • Interact with other resort departments and attend all resort meetings.
  • Conduct 90-day and annual evaluations of Associates as appropriate.
  • Perform all other duties as assigned by the General Manager.

Qualifications:

  • Education: High school diploma or equivalent required. College degree preferred or the equivalent of a minimum of 3-5 years of restaurant experience.
  • Experience: Minimum of two years supervisory experience of 25-75 people in the restaurant industry.
  • Certificates or Licenses: Maricopa County Food Service Worker Card and Arizona Title IV Alcohol Certification required. CPR certification preferred.

Knowledge, Skills, and Abilities:

  • Ability to maintain consistency, diplomacy and tact in difficult or challenging situations
  • Considerable knowledge of food and beverage products, proper preparation and presentation of foods and beverage items.
  • Knowledge of related event coordination areas: audio-visual, décor, entertainment, tenting, exhibits, power, etc.
  • Understanding of event logistics (set up and design).
  • Ability to read, write and speak English to comprehend and communicate job functions.
  • Ability to create special themes and menus.
  • Ability to effectively deal with internal and external customers, some of whom will require high levels of patience, tact and diplomacy to defuse anger, collect accurate information and resolve conflicts.
  • Ability to make quick and efficient decisions to benefit the team and guest.
  • Ability to memorize, perform and train on Service Standards, AAA 4 diamond standards, and Mystery shopper standards
